You must label the allergens contained in all food that you produce yourself in your business. This applies to both packaged and loose foods. The legal basis for this is the European Food Information Regulation (FIR).
Cereals containing gluten, eggs, soya, milk, crustaceans, fish and molluscs (snails, mussels, etc.), peanuts and nuts (almonds, hazelnuts, etc.), celery, mustard and mustard seeds, lupins as well as sulphur dioxide and sulphites (in a concentration of more than 10 mg/kg or 10 mg/l) frequently trigger food allergies and intolerances and must therefore be labelled. Products derived from the corresponding products are also subject to the labelling requirements of the FIR.
